]]> It takes practice to bake a good pie, but what Lauren Ko does is on a whole other level. Her pies look too perfect to be eaten, but the good news is that she keeps making more and more of them.

With 245,000 followers on Instagram, Lauren is the unofficial pie queen. The San Diego-born baker uses colorful fruits and other ingredients to create amazing colors, textures, and flavor. The has never had any professional training, just enough talent and will to practice for years.

She has recently moved to Washington and opened her own confectionery named Lolo Kitchen. Without a doubt, there will be people catching the first flight to Washington just to try her pies.

]]> If you think that pie should not only taste good but also look good, then you’ll love those made by Lauren Ko. This Seattle based writer, artist, and self-taught baker excels in pie design, making delicious pies characterized by mesmerizing shapes and patterns.

Lauren creates a traditional crust which she then combines with colorful fillings that give her baked goods such a unique feel. What makes her pies even more impressive is the fact that she only started baking a few years ago.

“I’m driven by color and pattern, so I’m constantly brainstorming color combinations and geometric patterns that I think I can replicate with pie dough [and] fruit,”- Lauren explains her creative process. “What I create during a particular baking session is also often informed by produce that is in season and what’s currently in my fridge. My final products are generally happy accidents.”
