Keki Modern Cakes became a huge hit since opening its doors to New Yorkers in Chinatown, and it didn’t take long for them to become a true online sensation. Their Instagram page accumulated 45,000 followers, but their cheesecakes have to be seen “in action” to be truly appreciated.
Keki Modern Cakes founder Moul Kim decided to reimagine the original recipe during his travels across Asia. Keke’s famous bouncy cheesecakes pay homage to Japan’s version of the desert which has a much smoother and lighter texture.
Since he doesn’t have the same kind of ingredients at his disposal, Kim decided to add Amish cream cheese and mascarpone to the mix, and the final result was truly amazing. People couldn’t wait to see Keke’s signature cheesecakes jiggle on their plate, but their taste impressed them just as much.
