This Shop Offers The Most Delicious Cheese From Around the World

Murray’s Cheese was founded in 1940 by Murray Greenberg in Greenwich Village, aiming to find the most delicious cheese and specialty grocery items from around the world. In the 1970s, the shop was sold to clerk Louis Tudda, an Italian immigrant from Calabria. In 1991, it was bought by Rob Kaufelt who began traveling the globe the search of new and undiscovered cheeses to bring to the US.

Murray’s has evolved into a world-renowned specialty food shop that offers amazing cheese, meat, and other grocery items. According to their website, the team continues to travel regularly across the country and to Europe in search of new cheeses.

“We’ve designed each cave to ensure that every wheel of cheese matures in its ideal environment, and specifically calibrated each to be a chamber in which temperature, humidity and microbial activity can all be controlled and monitored with the greatest precision,” reads the website.

For centuries, caves have been used as an aging facility for cheese and the practice of aging cheese is very common throughout Europe but was relatively rare in the US. “Over the years, we have learned a lot about the best methods for cheese ripening, from both our cave practices and through fostering relationships with cheesemakers and affineurs around the globe.”
